Macarons and macaroons are subject to a severe identity crisis based on the inclusion or subtraction of a single vowel. With a shared key ingredient, whipped egg whites, they both may seem to be close cousins but the variation in other ingredients, production and assembly makes them more of a second or third cousin if any relation at all. Macaroons are a dense coconut drop cookie baked to a golden brown. Macarons are assembled to look more like a brightly colored Oreo cookie with a texture, flavor and chew unlike any other cookie you have ever had.
If you have the self-control to make them last up to five days without eating them all, you can store them in the refrigerator. They will store in the freezer in an airtight container for up to three months. They are best consumed at room temperature.

Macarons are gluten free. Some additions to the shells and fillings can add gluten so be sure to ask if you are unsure.
